Fresh roma tomatoes are gently simmered with zucchini, green and red bell pepper, mushrooms and herbs. The addition of ricotta cheese, just before serving, makes the sauce nice and rich.
Roux has historically been used to make gumbo, but it wasn’t in my mom’s recipe. My most frequently requested dish at work, tailgating events, and home is currently this gumbo without roux. In this gumbo, the vegetables really stand out!
